Hobo Beggar Stew With Ground Beef#q=hobo Stew Recipe in Foil

With spring, comes crazy weather. 1 day it's 70º, and so next…snow, sleet, and a longing for a overnice pot of "Hobo Hamburger & Macaroni Stew"! It was nasty out, and I hateful downright night, cold and nasty. And this hearty, homey, stick-to-your-ribs babyhood favorite was just the ticket to soothe the soul. And boy did it ever!

There are many names for this soup/stew, and yous may know it simply by Hamburger Macaroni Soup, or Girl Picket Soup, and even "camping ground soup"! Information technology'south made many unlike means, and traditionally made with any bits you have hanging around to toss into the pot before they go bad. And for parties and such, usually the host gets the pot started with broth and cooked meats, and guests all bring canned goods, beans, and fresh veggies to toss in! You lot actually tin't go wrong, and so feel costless to add together whatever you take that needs to be used up! This pot ended up with lots of goodies including cabbage and zucchini!

I like to make mine using crushed tomatoes, beef broth, and a little love apple paste, but you can go lighter on the tomatoes and heavier on the broth if you'd similar. E'er make what your cooking co-ordinate to your own preferences and what you lot enjoy.

Aforementioned goes for the pasta. I used macaroni noodles, but yous can swap that out for rice or even potatoes if they're more what you lot have a taste for!

Vegetables? Just about anything goes! I added onions, carrots, celery, zucchini, cabbage, and corn! I normally like to add light-green beans, likewise, just I was out. (That'south how the last of the zucchini made it'due south way into the pot! Proficient swap! 😉 )

Ingredients

  • ii Tbl. butter
  • i lb. extra lean ground beef
  • one big onion, chopped into 1/2" chunky pieces
  • 1 rib celery, sliced
  • 8 oz. baby carrots, sliced thickly into 4ths
  • two tsp. dried oregano
  • 1 tsp. dried italian seasoning
  • one tsp. dried parsley
  • 1 tsp. dried thyme
  • 1 tsp. kosher salt
  • 1 ane/2 tsp. coarse ground black pepper
  • 3 cloves garlic, minced
  • two Tbl. flour
  • i (48 oz.) box beef stock or goop
  • 1 (28 oz.) can crushed tomatoes
  • 2 Tbl. love apple paste, to gustatory modality
  • 1/2 tsp. worcestershire sauce
  • 1 1/2 Tbl. beefiness bouillon base such as Better Than Bouillon
  • 2 - 3 tsp. (packed) dark brown sugar (as yous like)
  • one small parmesan rind, optional only always so adept!

Instructions

  • In a stock pot, add butter and melt over medium heat. Crumble in ground beefiness and add onion, celery carrots, and seasonings up to garlic. Sauté until beef is done breaking upward equally it cooks. (*No need to drain when using extra lean ground beefiness. The juices left are wonderful!)
